We’ve been serving up vegan/vegetarian breakfast at Cafe Mosaics and The Moth Cafe for many years. With all that’s going on in the world, we wanted you to be able to make a hearty plant-based breakfast at home! Our in-house made vegan hollandaise sauce will take your tofu scramble to the next level of deliciousness.
This super easy tofu scramble with vegan hollandaise is sure to become a staple meal (for breakfast or anytime of the day). The recipe is packed full of fresh veggies, plant-based protein, hearty carbs, and healthy fats to fuel your day.
Tofu scrambles are such a versatile meal, there are many ways to customize and use what you already have in the fridge!
You can use any veggies you prefer, for example, eggplant, Brussel sprouts, mushrooms, zucchini, bell pepper, onion, or tomatoes.
Today we chose:
Red Bell Pepper
Zucchini
Cremini Mushrooms
We used extra firm tofu when making this recipe (and that’s what we use for The Moth Breakfast Bowl), but you could use firm, medium, or soft tofu, depending on the consistency you would like for your scramble.
Another great plant protein is tempeh. Some may describe tempeh as having a slightly nutty flavour. When using tempeh for a scramble we like to mash the spice in to get all that good flavour in there!
You could have this as just a tofu & veggie scramble, but we like to add some hearty carbs to make it a more filling meal. For this recipe, we used sweet potato, but other great options are brown rice, potato, or whole-grain toast.
This meal easily comes together by sautéing veggies, tofu and spices and roasting sweet potato. Then serving the meal with avocado and our vegan Hollandaise sauce!

Tofu Scramble with Vegan Hollandaise
Ingredients
- 1 red bell pepper diced
- 1 small zucchini diced
- 1 handful cremini mushrooms diced
- 1 medium sweet potato cubed
- 1 tbsp olive oil (divided use)
- 1/2 package extra firm tofu
- 2 tbsp nutritional yeast
- 2 tsp smoked paprika (divided use)
- 2 tsp chili powder (divided use)
- 2 tsp garlic powder (divided use)
- 1/2 tsp turmeric
- sea salt (to taste)
- 1/2 avocado
- hollandaise
Instructions
- Preheat oven to 400 degrees F
- Place sweet potatoes on a baking tray and season with 1/2 tbsp olive oil, 1 tsp smoked paprika, 1 tsp chili powder, 1 tsp garlic powder and a pinch of sea salt, toss to coat. Bake for approximately 30 minutes (depending on how small you chopped the potatoes). Flipping once halfway through to ensure even cooking. You'll know the sweet potatoes are done when they're tender when pierced with a fork.
- Heat a large non-stick skillet over medium heat. Add olive oil and veggies, sauté for a few minutes until veggies are slightly softened.
- Meanwhile, drain the tofu and squeeze out any excess liquid with paper towel. It is not necessary to press the tofu for this recipe since a little moisture is okay. Crumble the tofu into the pan using your hands (or mash in a bowl with a fork if you prefer). Mix the remaining seasonings (nutritional yeast, 1 tsp smoked paprika, 1 tsp chili powder, 1 tsp garlic powder, turmeric, and sea salt) with a little water to form a slightly liquidy mixture. Pour over the tofu and mix all together with the veggies. Sauté for a few more minutes.
- Serve tofu scramble over sweet potatoes and top with sliced avocado, lots of hollandaise, green onion and an extra sprinkling of nutritional yeast. Enjoy!
Notes
Bonus Tip!
If you’ve been missing that “eggy” taste since transitioning to a plant-based diet, try adding black salt or “Kala Namak”. It has a sulfuric taste that mimics the taste of eggs. Start by adding a small amount to your seasoning blend, approximately a 1/4 tsp, and see how you like the taste!
