Today we’re sharing our famous vegan Banana Walnut Loaf recipe! People say it’s the best banana loaf in Edmonton.
This loaf is super moist and made with simple ingredients that you probably already have at home.
Some people are surprised that a vegan banana loaf can be this good. But, our secret is simple, lots of bananas! Using 5 large ripe bananas makes it super moist and perfectly sweet. And because of all that banana, this recipe has less added sugar than traditional banana bread and a small amount of oil.
We typically use vegetable oil, but if you prefer you can substitute melted coconut oil. If using coconut oil, make sure the banana and water are room temperature so the coconut oil doesn’t harden.
Did you know that Costco sells chocolate chips that are diary free? You’ll definitely want the big bag for all the banana loaf you’re going to be making.
This banana loaf is pretty easy to make, check out the video below to see!
Banana Walnut Loaf
Ingredients
- 5 large ripe bananas
- 1/4 cup vegetable oil
- 1/4 cup water
- 2 cups whole wheat flour
- 1/4 cup sugar
- 1 1/2 tsp baking soda
- 1/3 cup chocolate chips
- 1/3 cup raw walnuts (plus more for topping)
Instructions
- In a medium mixing bowl break up and mash bananas. We use a mixer to puree the banana so it's more liquidy.
- Add oil and water to banana while mixing. Combine until creamy, some little chunks of banana are okay.
- Combine all dry ingredients in a large bowl.
- Fold banana mixture into dry ingredients.
- Grease a loaf pan, fill with batter and smooth out the top with a spatula.
- Top with more raw walnuts, press down lightly into batter.
- Bake at 350 degrees F for 45-55 mintues. Cover with foil for the last 10-15 minutes to prevent the top and walnuts from over browning.
