One of the items from our original menu at The Moth Cafe was a Raw Gluten-Free Avocado Coconut Bacon Bagel. Recently, we brought it back to the menu with new and improved coconut bacon!
Today, we want to share our Raw Gluten-Free Coconut Bacon recipe with you. It’s so delicious on breakfast sandwiches, burgers, and of course raw bagels.
Young Coconuts
The tricky part of this recipe is to choose the perfect young coconuts that have a soft but firm layer of coconut meat. How do you know? There are a couple of ways. When bought in the store, the green skin is usually taken off to reveal a white undercoat. The whiter the coconut, the better. If the outside of the coconut is compromised by cracks or discolouration, chances are the inside is not so good. Usually, the tip of the coconut is the area that browns first. You can also press the bottom of the coconut. If it’s firm it’s good! If it’s soft, the inside is compromised.
And just when you think you brought home the most perfect coconut, don’t be surprised if there is no coconut meat inside, or if the coconut is pink. It happens. This is what makes this recipe a little more labour intensive. A lot of chopping and sweat, for a little coconut meat (but we think a unique meal like this is worth it!). So to make this recipe work, go ahead and buy a few coconuts (just to be on the safe side).

Raw Gluten-Free Coconut Bacon
Ingredients
- 2 cups Young Thai Coconut Flesh (about 2 young coconuts)
- 1/4 cup Tamari
- 2 tbsp Maple Syrup
- 1 tsp Paprika
- 1 tsp Cracked Pepper
- 3 drops Liquid Smoke
- 1 pinch Sea Salt
Instructions
- Cut off the tip of the young coconuts. Drain the juice and set aside.
- Crack open the coconut in half. Scoop out the meat. You will need about 2 cups worth.
- Skin the coconut meat of its outer layer. Fillet the pieces into 2 inch wide strips. (see our recipe video for demonstration)
- Combine the remaining ingredients in a large bowl and mix well.
- Add the coconut meat and marinate for at least 30 minutes.
- Transfer the marinated coconut meat onto a dehydration tray. Use remaining marinade and pour over the coconut meat before dehydrating. Dehydrate overnight or for 8-10 hours at 115 degrees Fahrenheit.
